Ingredients

- 1 cup farro
- 1 red bell pepper
- 1 zucchini
- 1 red onion
- 1 cup cherry tomatoes
- 2 cloves garlic
- 3 tablespoons extra-virgin olive oil
- 2 tablespoons lemon juice
- 1/4 cup fresh parsley
- salt — to taste
- black pepper — to taste

Preheat oven to 400°F (200°C).

Rinse farro under cold water, then cook it in a pot with 3 cups of water and a pinch of salt. Bring to a boil, reduce heat to a simmer, and cook for 20-25 minutes until tender. Drain and set aside.

While farro is cooking, cut red bell pepper, zucchini, and red onion into bite-sized pieces. Halve the cherry tomatoes.

Place the chopped vegetables and whole garlic cloves on a baking sheet. Drizzle with 2 tablespoons of olive oil, and sprinkle with salt and pepper. Toss to coat evenly.
