- 1 onion
- 1 red bell pepper
- 2 cups broccoli florets
- 2 carrot
- 3 cloves garlic
- 1 can canned chickpeas
- 2 tablespoons soy sauce
- 2 cups cooked brown rice
- 1 cup plain yogurt
- 2 tablespoons lemon juice
- 1/4 cup fresh parsley
- salt — to taste

Heat olive oil in a large pan over medium heat.

Chop the onion, red bell pepper, and carrots into bite-sized pieces.
