Ingredients

For 4 servings

  • 2 sweet potato
  • 1.5 cups all-purpose flour
  • 1 teaspoon salt
  • 2 tablespoons olive oil
  • 2 cloves garlic
  • 14 ounces canned diced tomatoes
  • 0.5 cup basil leaves
  • black pepper — to taste

Instructions

  1. 1

Peel and cube the sweet potatoes, then boil them in salted water for 10 minutes until tender.

  2. 2

Drain and mash the sweet potatoes thoroughly in a bowl.

  3. 3

Add flour and salt to the mashed sweet potatoes, mixing until a dough forms.

  4. 4

Divide the dough into four portions and roll each into a long rope; cut into 1-inch pieces to form gnocchi.

  5. 5

Bring a pot of salted water to a boil and cook the gnocchi in batches until they float, about 2-3 minutes; remove with a slotted spoon.

  6. 6

In a pan, heat olive oil over medium heat, add minced garlic, and sauté until fragrant.

  7. 7

Add the canned diced tomatoes to the pan and simmer for 5 minutes.

  8. 8

Stir in chopped basil leaves, season with salt and pepper, and cook for another 2 minutes.

  9. 9

Toss the cooked gnocchi in the sauce and serve immediately.
