Ingredients

For 4 servings

  • 500 g chicken breast
  • 400 g plain Greek yogurt
  • 200 g quinoa
  • 150 g spinach
  • 200 g cherry tomatoes
  • 1 cucumber
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • 2 clove garlic
  • salt — to taste
  • black pepper — to taste

Instructions

    Marinate chicken: In a bowl, combine 200g Greek yogurt, lemon juice, minced garlic, a pinch of salt, and black pepper. Add chicken and coat well. Let marinate for 15 minutes.

    Rinse quinoa under cold water. Cook according to package instructions in a saucepan. Fluff with a fork and set aside.

    Heat olive oil in a pan over medium heat. Add marinated chicken and cook for 6-7 minutes on each side until fully cooked. Remove from heat and let rest for 5 minutes before slicing.
