Ingredients

  • 1 cup white rice
  • 1 cup brown lentils
  • 1 onion
  • 1 carrot
  • 400 g canned tomatoes
  • 2 cups water
  • 2 tbsp vegetable oil
  • 2 cloves garlic
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • salt — to taste
  • black pepper — to taste

Instructions

    Rinse the white rice and brown lentils under cold running water.

    Dice the onion and carrot, and finely chop the garlic.

    In a large skillet, heat the vegetable oil over medium heat.

    Add the onion, carrot, and garlic to the skillet and sauté until the vegetables are soft, about 3-4 minutes.

    Stir in the ground cumin and ground coriander and cook for another minute until fragrant.

    Add the canned tomatoes, water, rinsed rice, and lentils to the skillet.

    Season with salt and black pepper to taste and bring to a boil.
