Ingredients

For 4 servings

  • 240 g banana
  • 100 g quick-cooking oat
  • 150 g all-purpose flour
  • 300 ml unsweetened soy milk
  • 40 ml vegetable oil
  • 10 g baking powder
  • 2 g ground cinnamon
  • 1 g salt
  • 5 ml vanilla extract

Instructions

  1. 1

A waffle maker is required. Preheat it to medium-high, following its manufacturer's instructions. The cooking time assumes four batches in a single large-waffle maker.

  2. 2

Use very ripe bananas and weigh out 240 g after peeling. Mash thoroughly in a large bowl, then whisk in the soy milk, vanilla extract and 30 ml of the vegetable oil.

  3. 3

In another bowl, mix the oats, flour, baking powder, cinnamon and salt. Stir the dry mixture into the banana mixture just until no dry flour remains. Let stand for 10 minutes so the oats soften; the batter will be thick but spoonable.

  4. 4

Use the remaining 10 ml oil to lightly grease the waffle plates between batches as needed. Add the manufacturer's recommended quantity of batter without overfilling; this recipe makes about four large waffles.

  5. 5

Close the waffle maker and cook each batch for approximately 6–7 minutes, until golden, steam has mostly subsided and the center is set without wet batter. Avoid opening during the first 5 minutes, and cook longer if needed before gently releasing the waffle.

  6. 6

Repeat with the remaining batter. Place finished waffles on a wire rack rather than stacking them so their edges stay crisp, and serve promptly.
