Ingredients
For 4 servings
- 800 g boneless skinless chicken thigh
- 600 g broccoli
- 600 g potato
- 45 ml lemon juice
- 45 ml olive oil
- 2 tsp garlic powder
- 1 tsp dried oregano
- 1 tsp salt
- 0.5 tsp black pepper
Instructions
- 1
Choose four small potatoes weighing about 150 g each. Scrub and halve them lengthwise. Cut the broccoli into roughly 3 cm florets, peeling and thinly slicing the tender stalk. Preheat the empty air fryer to 200°C/400°F for 3 minutes.
- 2
Toss the potato halves with 5 ml olive oil and 1/4 tsp salt. Arrange all eight halves in one uncrowded layer, cut-side down. Air-fry at 200°C/400°F for 25–30 minutes, turning after 15 minutes, until a knife slides easily through the centers. Transfer to a serving bowl and cover with a plate and a kitchen towel to retain warmth.
- 3
Meanwhile, whisk the lemon juice, 15 ml olive oil, 1/2 tsp garlic powder, oregano, 1/4 tsp salt and 1/4 tsp black pepper in a small bowl. Set this dressing aside.
- 4
Toss the broccoli with 10 ml olive oil, 1/2 tsp garlic powder and 1/4 tsp salt. Reduce the air fryer to 190°C/375°F. Cook in two 300 g batches, spreading each in a single layer without crowding. Air-fry each batch for 8–10 minutes, shaking after 4 minutes, until the stems are tender and the edges are browned. Transfer to a large bowl and cover to retain warmth.
- 5
Cut the chicken into evenly sized 2.5 cm pieces. Toss with the remaining 15 ml olive oil, 1 tsp garlic powder, 1/4 tsp salt and 1/4 tsp black pepper.
- 6
Increase the air fryer to 200°C/400°F. Cook the chicken in two 400 g batches, keeping each batch in a single layer with small gaps. Air-fry each batch for 12–14 minutes, turning after 6 minutes. Check several of the largest pieces with a food thermometer: each must reach at least 74°C/165°F. If necessary, continue in 2-minute increments and check again. Transfer cooked chicken to the broccoli bowl, covering between batches.
- 7
Whisk the dressing again, pour it over the chicken and broccoli, and toss gently. Divide between four plates with the roasted potato halves, spooning the dressing from the bowl over the potatoes. Serve immediately. Allow approximately 85 minutes for preheating, all five cooking batches and transfers.
