Ingredients

For 4 servings

  • 2 cups plain Greek yogurt
  • 1 cucumber
  • 1 cup cherry tomatoes
  • 2 tablespoons pine nuts
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh parsley
  • salt — to taste
  • black pepper — to taste

Instructions

  1. 1

Toast the pine nuts in a small skillet over medium heat until golden brown, about 3-4 minutes, stirring frequently, then set aside to cool.

  2. 2

Peel the cucumber, halve it lengthwise, scoop out the seeds, and chop it into small dice.

  3. 3

Halve the cherry tomatoes and roughly chop the parsley.

  4. 4

In a small bowl, combine the olive oil, lemon juice, salt, and black pepper, whisking to create a simple dressing.

  5. 5

In a medium bowl, mix the diced cucumber, cherry tomatoes, and parsley, then drizzle with the dressing and toss to combine.

  6. 6

Layer each serving glass with half a cup of Greek yogurt, a portion of the cucumber-tomato salad, and a sprinkle of toasted pine nuts. Repeat the layers until ingredients are used up.

  7. 7

Serve immediately or chill briefly in the fridge before serving.
