Ingredients
For 4 servings
- 2 cups white rice
- 4 cups water
- 2 tablespoons vegetable oil
- 4 egg
- 2 cups frozen mixed vegetables
- 2 tablespoons soy sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- salt — to taste
- black pepper — to taste
Instructions
- 1
Rinse the white rice under cold water until the water runs clear.
- 2
In a medium pot, combine the rice and water, bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes until the rice is cooked and water is absorbed. Remove from heat and let it sit covered for 5 minutes.
- 3
In a large frying pan or wok, heat 1 tablespoon of vegetable oil over medium-high heat.
- 4
Crack the eggs into the pan, scramble them until fully cooked, then remove and set aside.
- 5
Add the remaining tablespoon of vegetable oil to the same pan, add the frozen mixed vegetables, and sauté for about 5 minutes until heated through.
- 6
Add the cooked rice to the pan with the vegetables, stirring to combine evenly.
- 7
Return the scrambled eggs to the pan, and add soy sauce, garlic powder, onion powder, salt, and black pepper to taste.
- 8
Stir-fry everything together for another 2-3 minutes, ensuring the rice is evenly coated with the seasoning.
- 9
Serve the fried rice hot and enjoy.
