- 1 cup hot water
- 1 tablespoon olive oil
- 1 onion
- 1 bell pepper
- 1 zucchini
- 2 cloves garlic
- 1 cup canned diced tomatoes
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 0.5 teaspoon salt
- 1 cup black beans
- 0.25 cup fresh cilantro

Rehydrate textured vegetable protein by combining with hot water in a bowl. Set aside for 5 minutes.
