  • 8 chicken thigh
  • 2 tablespoon olive oil
  • 1 onion
  • 4 clove garlic
  • 2 carrot
  • 2 celery stalk
  • 2 cup canned diced tomato
  • 2 cup canned white beans
  • 2 cup chicken stock
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • salt — to taste
  • black pepper — to taste
  • 2 bay leaf

Instructions

    Preheat the oven to 350°F (175°C).

    Season the chicken thighs with salt and black pepper.

    In a large oven-safe pot, heat the olive oil over medium heat.

    Brown the chicken thighs on both sides until golden, about 5 minutes per side. Remove and set aside.
