  • 2 15 oz can canned chickpeas
  • 1 onion
  • 3 clove garlic
  • 1 tablespoon ginger
  • 1 15 oz can canned diced tomatoes
  • 1 cup coconut milk
  • 2 tablespoon curry powder
  • 1 teaspoon cumin
  • 1 teaspoon cayenne pepper
  • salt — to taste
  • black pepper — to taste
  • 2 tablespoon olive oil
  • 1 bunch fresh cilantro

Instructions

    Boil the eggs for 10 minutes, then cool them under cold running water, peel, and set aside.

    Drain and rinse the canned chickpeas.

    Chop the onion, garlic, and ginger.

    In a large pan, heat olive oil over medium heat. Add chopped onion, garlic, and ginger, and sauté until the onion is translucent.
