Ingredients

- 600 g salmon fillet
- 200 g quinoa
- 2 avocado
- 1 orange
- 1 lemon
- 2 tbsp olive oil
- 200 g mixed salad greens
- 1 red onion
- salt — to taste
- black pepper — to taste
- 1 tsp garlic powder

Rinse the quinoa under cold water. In a pot, combine quinoa with 400 ml water and a pinch of salt. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes or until quinoa is fluffy.

Preheat a non-stick pan over medium heat with 1 tablespoon of olive oil. Season salmon fillets with salt, black pepper, and garlic powder.

Slice the orange and lemon in half. Juice one half of each into a bowl and reserve the remaining halves for garnish.

Add salmon fillets to the pan, skin-side down. Cook for 4-5 minutes or until skin is crispy, then flip. Pour the citrus juice over the salmon and cook for another 4-5 minutes until the salmon is cooked through.

Remove salmon from the pan and let it rest. In a large bowl, combine cooked quinoa, mixed salad greens, diced avocado, and thinly sliced red onion.

Flake the salmon into large chunks and gently mix into the salad. Season with additional salt and pepper to taste.

Drizzle the remaining tablespoon of olive oil over the salad and toss gently. Serve with orange and lemon slices for garnish.
