  • 1 cup dried lentils
  • 1 onion
  • 1 carrot
  • 1 cup frozen peas
  • 2 cloves garlic
  • 2 tablespoons vegetable oil
  • 2 teaspoons curry powder
  • salt — to taste
  • black pepper — to taste
  • 4 cups water

Instructions

    Rinse the brown rice and lentils under cold water.

    Dice the onion and carrot, and mince the garlic.

    Heat the vegetable oil in a large skillet over medium heat.

    Add the diced onion, carrot, and minced garlic to the skillet. Sauté until the onion is translucent, about 3 minutes.
