  • 1 cup rolled oats
  • 1 cup dry green lentils
  • 1 carrot
  • 1 onion
  • 2 clove garlic
  • 14.5 ounce canned diced tomatoes
  • 1 tablespoon vegetable oil
  • 4 cup water
  • 1 vegetable stock cube
  • salt — to taste
  • black pepper — to taste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano

Instructions

    Rinse the dry lentils under cold water.

    Dice the carrot and onion; mince the garlic.

    In a large pot, heat vegetable oil over medium heat.

    Add onion and carrot, sauté until softened, about 3 minutes.

    Add garlic, cook for another minute until fragrant.

    Stir in oats, lentils, and diced tomatoes with their juice.
