- 2 cup water
- 2 zucchini
- 2 red bell pepper
- 1 red onion
- 1 cup cherry tomatoes

Zest and juice the lemon, setting aside the juice. In a bowl, mix lemon zest, 2 tablespoons of olive oil, minced garlic, chopped dill, parsley, salt, and pepper.
