Ingredients
For 1 servings
- 75 g dry egg noodle
- 100 g bell pepper
- 120 g commercially fully cooked chicken breast
- 25 g cream cheese
- 0.5 teaspoon mild Cajun seasoning
- 225 ml water
Instructions
- 1
Finely slice the bell pepper and cut the commercially fully cooked chicken into small bite-size pieces.
- 2
Put the dry egg noodles, bell pepper and water in a wide 1.2-litre microwave-safe bowl, breaking long noodles to fit. Stir to wet the noodles and cover with a vented microwave-safe lid.
- 3
Microwave at 1000 watts on HIGH for 3 minutes. Carefully uncover away from your face, stir thoroughly and cover again. Microwave on HIGH for another 3 minutes, then stir. Continue in 1-minute intervals until the noodles are just tender, usually another 1–2 minutes. Leave the remaining cooking liquid in the bowl.
- 4
Stir in the chicken, cream cheese and Cajun seasoning. Cover and microwave on HIGH for 2 minutes. Stir thoroughly, especially through the centre, then microwave covered for another 1 minute. Check several places with a food thermometer; continue in 30-second intervals, stirring between intervals, until the chicken and noodles reach 165°F/74°C throughout.
- 5
Let stand covered for 3 minutes. Stir, confirm the centre reaches 165°F/74°C and eat warm. Keep the chicken and cream cheese refrigerated before use, and refrigerate any leftovers within 2 hours.
