  • 4 chicken breast
  • 1 lemon
  • 2 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 3 clove garlic
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 carrot
  • 2 zucchini
  • 1 red bell pepper
  • 2 cup broccoli florets
  • 1 red onion

    Preheat the oven to 400°F (200°C).

    In a small bowl, zest and juice the lemon. Mince 2 cloves of garlic.

    Combine lemon juice, lemon zest, olive oil, thyme, rosemary, minced garlic, salt, and pepper in a bowl.

    Place chicken breasts in a shallow dish and pour marinade over them. Cover and marinate in the refrigerator for 20 minutes.

    While the chicken marinates, peel and slice carrots, and cut zucchini, red bell pepper, and red onion into bite-sized pieces.

    After marinating, remove chicken from the refrigerator and place on a separate baking sheet.
