Ingredients
For 4 servings
- 500 g chicken thigh
- 200 g plain yogurt
- 2 tbsp lemon juice
- 3 cloves garlic
- 1 tbsp ginger
- 1 tbsp garam masala
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp ground turmeric
- salt — to taste
- black pepper — to taste
- 2 tbsp vegetable oil
- 1 onion
- 400 g canned tomato
- 100 ml heavy cream
- 4 cups cooked rice
- cilantro — to taste
Instructions
- 1
Cut chicken thighs into bite-sized pieces. In a bowl, mix yogurt, lemon juice, minced garlic, grated ginger, garam masala, ground cumin, ground coriander, ground turmeric, salt, and pepper to make the marinade.
- 2
Add chicken to the marinade, cover, and refrigerate for at least 30 minutes.
- 3
Heat 1 tbsp of vegetable oil in a large pan over medium heat. Add marinated chicken and cook until browned and cooked through, about 10-12 minutes. Remove chicken from the pan and set aside.
- 4
In the same pan, add the remaining 1 tbsp of vegetable oil. Add chopped onion and sauté until golden, about 5 minutes.
- 5
Add canned tomatoes and simmer for 10 minutes, until thickened.
- 6
Stir in heavy cream and return the cooked chicken to the pan. Cook for an additional 5 minutes to heat through.
- 7
Serve the chicken tikka masala over cooked rice, garnished with fresh cilantro.
