Ingredients

  • 8 eggs
  • 2 can canned sardines
  • 100 gram fresh spinach
  • 1 red onion
  • 2 tablespoon olive oil
  • salt — to taste
  • black pepper — to taste
  • 2 clove garlic

Instructions

    Preheat your oven to 375°F (190°C).

    In a large bowl, whisk together the eggs with a pinch of salt and black pepper.

    Drain the canned sardines and flake them with a fork.

    Chop the red onion and mince the garlic cloves.

    In an oven-safe skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent, about 3 minutes.

    Add the spinach to the skillet and cook, stirring, until wilted, about 2 minutes.

    Evenly distribute the flaked sardines over the spinach and onion mixture.
