Ingredients
For 4 servings
- 2 cups white rice
- 4 cups water
- 2 tablespoons vegetable oil
- 3 cloves garlic
- 1 cup frozen peas
- 4 eggs
- 2 tablespoons soy sauce
- salt — to taste
- pepper — to taste
Instructions
- 1
Rinse the white rice under cold water until the water runs clear.
- 2
Combine the rice and water in a pot, bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes until the water is absorbed and the rice is cooked. Fluff with a fork and set aside.
- 3
While the rice is cooking, peel and mince the garlic cloves.
- 4
In a large pan, heat vegetable oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
- 5
Add the frozen peas to the pan and cook for 3-4 minutes until heated through.
- 6
Push peas to the side of the pan and crack the eggs into the space. Scramble the eggs until cooked through, then mix with peas.
- 7
Add the cooked rice to the pan, stirring to combine with the garlic, peas, and eggs.
- 8
Pour soy sauce over the rice mixture, season with salt and pepper to taste, and stir everything together until evenly coated.
- 9
Cook for another 2-3 minutes, stirring occasionally, until everything is heated through. Serve hot.
