Ingredients

For 4 servings

  • 400 g tempeh
  • 2 zucchini
  • 2 carrot
  • 4 green onion
  • 120 g all-purpose flour
  • 1 teaspoon baking powder
  • 2 tablespoons soy sauce
  • 1 teaspoon garlic powder
  • ground black pepper — to taste
  • 2 tablespoons olive oil

Instructions

  1. 1

Grate the zucchini and carrot using a box grater, and finely slice the green onions.

  2. 2

Crumble the tempeh into small pieces and mix with the grated zucchini, carrot, and green onions in a large bowl.

  3. 3

Add the flour, baking powder, soy sauce, garlic powder, and black pepper to the vegetable mixture, and stir to combine well.

  4. 4

Heat olive oil in a large skillet over medium-high heat.

  5. 5

Scoop 1/4-cup portions of the mixture into the hot skillet and flatten slightly with a spatula to form fritters.

  6. 6

Cook the fritters for about 4 minutes on each side or until they are golden brown and cooked through.

  7. 7

Transfer the cooked fritters to a paper towel-lined plate to drain any excess oil before serving.
