Ingredients

  • 1.5 cups red lentils
  • 4 cups spinach
  • 1 cup coconut milk
  • 1 onion
  • 4 cloves garlic
  • 1 inch ginger
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1/2 teaspoon chili powder
  • 2 tablespoons vegetable oil
  • salt — to taste
  • 4 cups water
  • 1/4 cup cilantro

Instructions

    Rinse the red lentils under cold water until the water runs clear.

    In a large pot, heat the vegetable oil over medium heat. Add cumin seeds and toast until fragrant, about 30 seconds.

    Add finely chopped onion, minced garlic, and grated ginger to the pot. Sauté until the onion is translucent, about 5 minutes.
