Ingredients

- 500 g chicken thigh
- 4 tablespoon soy sauce
- 1 tablespoon ginger
- 2 clove garlic
- 2 tablespoon vegetable oil
- 400 g mixed frozen vegetables
- 2 cup white rice
- 4 cup water
- 2 green onion

Rinse the white rice under cold water and add it to a pot with 4 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until water is absorbed.

While the rice is cooking, mince the garlic and ginger. Slice the green onions and set aside.

Cut the chicken thighs into bite-sized pieces. In a bowl, combine the chicken pieces with 2 tablespoons of soy sauce, minced ginger, and garlic. Marinate for 10 minutes.

Heat the vegetable oil in a large pan over medium-high heat. Add the marinated chicken and stir-fry for about 5-7 minutes until fully cooked and no longer pink in the center.

Add the mixed frozen vegetables to the pan with the chicken and stir-fry for another 5-7 minutes until the vegetables are heated through.
