Ingredients
For 4 servings
- 500 grams chicken breast
- 1.5 cups orzo pasta
- 4 cups kale
- 1 lemon
- 3 cups chicken broth
- 2 tablespoons olive oil
- 2 cloves garlic
- salt — to taste
- black pepper — to taste
- 0.5 cups parmesan cheese
- 1 onion
Instructions
- 1
Dice the chicken breast into bite-sized pieces.
- 2
Season the chicken with salt and pepper.
- 3
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
- 4
Add the chicken to the skillet and cook until browned and cooked through, about 6-8 minutes. Remove chicken and set aside.
- 5
In the same skillet, add the remaining olive oil.
- 6
Chop the onion and mince the garlic, then add to the skillet, cooking until the onion is translucent, about 3-4 minutes.
- 7
Add the orzo to the skillet, stirring to coat with the oil and onion mixture for 2 minutes.
- 8
Pour in the chicken broth and bring to a boil. Reduce heat and let it simmer, stirring occasionally, until the orzo is tender and most of the liquid is absorbed, about 10 minutes.
- 9
Chop the kale into bite-sized pieces and add to the orzo halfway through the cooking time.
- 10
Zest and juice the lemon, then add both to the skillet along with the cooked chicken.
- 11
Stir in the parmesan cheese until well combined and creamy.
- 12
Adjust seasoning with additional salt and pepper to taste.
