Ingredients

- 500 g salmon fillet
- 200 g baby spinach
- 200 g cherry tomato
- 1 onion
- 2 clove garlic
- 2 tbsp olive oil
- salt — to taste
- black pepper — to taste
- 2 tbsp parsley
- 50 g Parmesan cheese
- 2 tbsp lemon juice

Preheat the oven to 200°C (400°F).

Rinse the salmon fillets under running water and pat dry with paper towels.

Season the salmon fillets with salt and black pepper, then set aside.

Wash and halve the cherry tomatoes. Slice the onion thinly and mince the garlic.

In a large ovenproof skillet, heat olive oil over medium heat. Add the onion and garlic, sautéing until onion is translucent.

Add the baby spinach and cook until wilted. Season with salt and pepper, then transfer the mixture to a bowl.

In the same skillet, place the salmon fillets and sear for 2 minutes on each side, just until lightly browned.

Turn off the heat and spread the cooked spinach and onion mixture over the salmon.

Top with halved cherry tomatoes and sprinkle grated Parmesan cheese over the top.

Bake in the preheated oven for 10 minutes, until the salmon is cooked through and the cheese is golden brown.

Remove from oven, sprinkle with chopped parsley and drizzle lemon juice over the top before serving.
