  • 400 g tofu
  • 2 tbsp cornstarch
  • 2 tbsp vegetable oil
  • 1 onion
  • 1 red bell pepper
  • 1 green bell pepper
  • 2 clove garlic
  • 2 carrot
  • 4 cup cooked white rice
  • 1 cup pineapple chunks
  • 3 tbsp soy sauce
  • 2 tbsp vinegar
  • 3 tbsp ketchup
  • 2 tbsp brown sugar
  • 1/2 cup water
  • salt — to taste
  • ground black pepper — to taste

Instructions

    Press and drain the tofu to remove excess water, then cut into 1-inch cubes.

    Toss the tofu cubes in cornstarch, ensuring they are evenly coated.

    Heat vegetable oil in a large skillet over medium-high heat. Cook tofu, turning occasionally, until golden and crispy, about 8-10 minutes. Remove and set aside.

    In the same skillet, add chopped onion, red and green bell peppers, and sliced carrots. Stir-fry for 5-6 minutes until just tender.
