  • 2 tablespoons olive oil
  • 1 red bell pepper
  • 1 onion
  • 2 cups kale
  • 2 cloves garlic
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 4 eggs
  • 1 lime
  • 0.5 cup cilantro

Instructions

    Rinse and drain the black beans if using canned.

    Dice the red bell pepper and onion, and roughly chop the kale. Mince the garlic.

    Heat olive oil in a large skillet over medium heat. Add the onions and red bell peppers, sauté until softened, about 5 minutes.

    Stir in the garlic, cumin, chili powder, salt, and black pepper, and cook for 1 minute until fragrant.
