- 1 onion
- 2 bell pepper
- 3 clove garlic
- 28 ounce canned crushed tomatoes
- 1 cup chicken broth
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- salt — to taste
- black pepper — to taste
- 8 ounce mushroom
- 1 bay leaf
- 2 tablespoon fresh parsley

Heat olive oil in a large pot over medium-high heat.

Season chicken thighs with salt and black pepper, then brown them in the pot on all sides. Remove chicken and set aside.
