- 2 cans canned tuna
- 1 can coconut milk
- 1 cup frozen peas
- 1 onion
- 2 cloves garlic
- 1 inch ginger
- 2 tablespoons curry powder
- 1 tablespoon olive oil
- salt — to taste
- black pepper — to taste
- 2 cups basmati rice
- 4 cups water
- 1/4 bunch cilantro

Rinse the basmati rice under cold water until the water runs clear. In a medium saucepan, bring 4 cups of water to a boil, add the rice, and cook for around 10 minutes until tender. Drain any excess water and set aside.

Meanwhile, dice the onion, mince the garlic, and grate the ginger.

In a large pan, heat olive oil over medium heat. Sauté the onion, garlic, and ginger until the onion is translucent, about 3-4 minutes.
