Ingredients

  • 600 g ground turkey
  • 2 tbsp olive oil
  • 1 yellow onion
  • 3 cloves garlic
  • 2 zucchini
  • 1 red bell pepper
  • 300 g frozen spinach
  • 1.5 tsp salt
  • 1 tsp black pepper
  • 400 g crushed tomatoes
  • 1 tbsp Italian seasoning
  • 200 g shredded mozzarella cheese
  • 50 g parmesan cheese

Instructions

    Preheat the oven to 180°C (350°F).

    Dice the onion and mince the garlic. Slice the zucchini and chop the red bell pepper.

    Heat olive oil in a large skillet over medium heat. Add the onion and garlic, sauté for 2-3 minutes until softened.

    Add the ground turkey to the skillet, cooking until browned and no longer pink, about 5-7 minutes. Ensure the turkey is cooked to an internal temperature of 74°C (165°F).

    Add the zucchini, red bell pepper, and frozen spinach to the turkey, stir and cook for another 5 minutes until vegetables are tender.
