Ingredients
For 4 servings
- 600 g ground turkey
- 2 tbsp olive oil
- 1 yellow onion
- 3 cloves garlic
- 2 zucchini
- 1 red bell pepper
- 300 g frozen spinach
- 1.5 tsp salt
- 1 tsp black pepper
- 400 g crushed tomatoes
- 1 tbsp Italian seasoning
- 200 g shredded mozzarella cheese
- 50 g parmesan cheese
Instructions
- 1
Preheat the oven to 180°C (350°F).
- 2
Dice the onion and mince the garlic. Slice the zucchini and chop the red bell pepper.
- 3
Heat olive oil in a large skillet over medium heat. Add the onion and garlic, sauté for 2-3 minutes until softened.
- 4
Add the ground turkey to the skillet, cooking until browned and no longer pink, about 5-7 minutes. Ensure the turkey is cooked to an internal temperature of 74°C (165°F).
- 5
Add the zucchini, red bell pepper, and frozen spinach to the turkey, stir and cook for another 5 minutes until vegetables are tender.
- 6
Stir in the crushed tomatoes, Italian seasoning, salt, and black pepper. Simmer for 5 minutes to blend flavors.
- 7
Transfer the turkey and vegetable mixture into a baking dish. Sprinkle the top evenly with mozzarella and parmesan cheese.
- 8
Bake in the preheated oven for 20-25 minutes until the cheese is golden and bubbling.
- 9
Let the gratin cool slightly before serving.
