  • 1 cup dry green lentils
  • 4 cups water
  • 2 cups frozen mixed vegetables
  • 1 onion
  • 2 cloves garlic
  • 2 tablespoons olive oil
  • 3 tablespoons soy sauce
  • 1 teaspoon ground cumin
  • 1 teaspoon ground paprika
  • salt — to taste
  • black pepper — to taste

Instructions

    Rinse the brown rice and lentils with cold water.

    In a medium pot, combine rice, lentils, and 4 cups of water. Bring to a boil, reduce heat, cover, and simmer for about 30 minutes until tender.

    Meanwhile, dice the onion and mince the garlic cloves.
