  • 500 g white fish fillet
  • 2 tbsp olive oil
  • 1 lemon
  • 2 tbsp fresh parsley
  • 1 tbsp fresh dill
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 8 whole wheat tortillas
  • 100 g red cabbage
  • 1 carrot
  • 1 avocado
  • 200 g cherry tomatoes
  • 0.5 red onion
  • 50 g feta cheese

Instructions

    Preheat a non-stick pan over medium heat.

    Pat dry the fish fillets, then season with salt, black pepper, and drizzle with 1 tablespoon of olive oil.

    Zest and juice the lemon. Set the juice aside.

    Cook the fish fillets in the preheated pan for 3-4 minutes on each side until cooked through and flaky.

    While the fish is cooking, shred the red cabbage and carrot, and thinly slice the red onion and cherry tomatoes.
