Ingredients

For 4 servings

  • 500 g gnocchi
  • 2 cups frozen shelled edamame
  • 4 cups fresh spinach
  • 2 tbsp olive oil
  • 2 cloves garlic
  • 1/2 cup parmesan cheese
  • salt — to taste
  • black pepper — to taste
  • 1/2 tsp red pepper flakes

Instructions

    Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions, about 3 minutes, or until they float to the top. Drain and set aside.

    While the gnocchi cooks, heat the olive oil in a large skillet over medium heat.

    Add the minced garlic to the skillet and sauté for 1 minute until fragrant.

    Add the frozen edamame to the skillet and cook for 3-4 minutes, stirring occasionally, until heated through.
