Ingredients

For 4 servings

  • 1 pound shrimp
  • 1 cup white rice
  • 3 guajillo chiles
  • 2 arbol chiles
  • 1 cup tomato sauce
  • 1 onion
  • 2 cloves garlic
  • 1 lime
  • 0.25 cup cilantro
  • 2 tablespoons vegetable oil
  • salt — to taste
  • black pepper — to taste

Instructions

    Cook the white rice according to package instructions and set aside.

    De-stem and de-seed guajillo and arbol chiles. Soak them in hot water for 5 minutes until softened.

    In a blender, combine the softened chiles, tomato sauce, half the onion, and garlic cloves. Blend until smooth.

    Heat 1 tablespoon of vegetable oil in a pan over medium heat. Add the blended sauce and cook for 5 minutes, stirring occasionally, until slightly thickened.

    Season shrimp with salt and black pepper. In another pan, heat 1 tablespoon of vegetable oil over medium-high heat, then add shrimp and cook for 2-3 minutes on each side until pink and cooked through.

    Add the cooked shrimp to the chile sauce and simmer for an additional 2 minutes so the flavors meld.

    Serve shrimp and sauce over the cooked rice. Garnish with chopped cilantro and a squeeze of lime juice.
