Ingredients

- 2 cups green lentils
- 2 cups frozen spinach
- 1 can canned diced tomatoes
- 1 onion
- 2 cloves garlic
- 1 tablespoon olive oil
- 1 cup bread crumbs
- 1/4 cup nutritional yeast
- 1 teaspoon dried oregano
- salt — to taste
- black pepper — to taste

Preheat the oven to 400°F (200°C).

Rinse and drain the green lentils.

Chop the onion and mince the garlic.

In a large oven-safe skillet, heat olive oil over medium heat. Add chopped onion and garlic, sauté for 3 minutes until translucent.

Add the green lentils, canned diced tomatoes (with juice), frozen spinach, dried oregano, salt, and black pepper. Stir well and cook for 5 minutes until heated through.
