  • 400 g firm tofu
  • 400 g canned chickpeas
  • 200 g spinach
  • 400 ml coconut milk
  • 1 onion
  • 2 cloves garlic
  • 1 tbsp ginger
  • 1 tbsp curry powder
  • 1 tbsp olive oil
  • salt — to taste
  • black pepper — to taste

Instructions

    Drain and rinse the chickpeas.

    Press the tofu to remove excess water and cut it into 1-inch cubes.

    Peel and finely chop the onion, garlic, and ginger.

    In a large pan, heat olive oil over medium heat.

    Add onion, garlic, and ginger to the pan, cooking until the onion is translucent, about 3 minutes.
