Ingredients

For 4 servings

  • 4 salmon fillet
  • 2 tablespoons fresh dill
  • 2 tablespoons fresh parsley
  • 1 teaspoon lemon zest
  • 2 cloves garlic
  • 3 tablespoons olive oil
  • 200 grams cream cheese
  • 100 milliliters heavy cream
  • 400 grams fresh spinach
  • 2 tablespoons butter
  • salt — to taste
  • black pepper — to taste

Instructions

  1. 1

    Preheat oven to 375°F (190°C).

  2. 2

Finely chop the fresh dill, parsley, and garlic.

  3. 3

In a small bowl, combine the chopped herbs, garlic, lemon zest, salt, and pepper.

  4. 4

Pat the salmon fillets dry with paper towels, then coat them with olive oil.

  5. 5

Press the herb mixture onto the top of each salmon fillet, ensuring a thick crust.

  6. 6

Place the salmon on a baking sheet lined with parchment paper and bake for 20-25 minutes, until the salmon is cooked through and flaky.

  7. 7

While the salmon is baking, heat butter in a large skillet over medium heat.

  8. 8

Add the spinach to the skillet and cook until wilted, about 3-4 minutes.

  9. 9

Reduce heat to low and add the cream cheese and heavy cream to the skillet, stirring until the mixture is smooth and creamy.

  10. 10

Season the creamy spinach with salt and pepper to taste, then keep warm until ready to serve.

  11. 11

Once the salmon is done, remove from oven and let rest for a couple of minutes.

  12. 12

Serve the salmon fillets on a bed of creamy spinach.
