Ingredients

  • 4 sweet potato
  • 500 g salmon fillet
  • 3 tbsp olive oil
  • 1 onion
  • 2 clove garlic
  • 200 g spinach
  • 200 ml heavy cream
  • 50 g parmesan cheese
  • salt — to taste
  • black pepper — to taste
  • 1 tbsp lemon juice

    Preheat the oven to 200°C (400°F).

    Peel and slice the sweet potatoes into thin rounds. Toss with 2 tbsp of olive oil, salt, and pepper.

    Spread the sweet potato slices on a baking sheet and roast in the oven for 20 minutes, until tender.

    While the sweet potatoes are roasting, heat 1 tbsp olive oil in a large pan over medium heat.

    Dice the onion and mince the garlic, then sauté in the pan until the onion is translucent.
