Ingredients

- 1.5 cups brown rice
- 2 cups canned chickpeas
- 1 can canned diced tomatoes
- 1 onion
- 2 cloves garlic
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- salt — to taste
- black pepper — to taste
- 2.5 cups water
Instructions

Rinse the rice under cold water until the water runs clear and set aside.

Drain and rinse canned chickpeas under cold water and set aside.

Peel and finely chop the onion and garlic cloves.

In a large pot, heat olive oil over medium heat. Add chopped onion and garlic, sauté until onion is translucent, about 3-4 minutes.

Add ground cumin, ground coriander, and paprika to the pot, stirring until fragrant, about 1 minute.

Add the rinsed rice, canned diced tomatoes with their juice, chickpeas, and water to the pot. Stir well to combine.
