Ingredients

For 4 servings

  • 2 cups white rice
  • 4 cups water
  • 4 eggs
  • 2 cups frozen mixed vegetables
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 2 green onion
  • salt — to taste
  • black pepper — to taste

Instructions

  1. 1

Rinse the white rice under cold water and combine it with water in a pot. Bring to a boil, then cover and simmer for 15 minutes or until water is absorbed and rice is cooked.

  2. 2

While the rice is cooking, chop the green onions and set aside.

  3. 3

In a large pan, heat the vegetable oil over medium heat. Add the frozen mixed vegetables and stir-fry for 5 minutes until heated through.

  4. 4

Push the vegetables to the side of the pan and crack the eggs into the empty space. Scramble the eggs until fully cooked, then mix with the vegetables.

  5. 5

Add the cooked rice to the pan, stirring to combine with the eggs and vegetables.

  6. 6

Pour in the soy sauce, and add salt and black pepper to taste. Stir everything together and cook for an additional 2 minutes.

  7. 7

Garnish with chopped green onions before serving.
