Ingredients
For 4 servings
- 2 cups white rice
- 4 cups water
- 4 eggs
- 2 cups frozen mixed vegetables
- 3 tablespoons soy sauce
- 2 tablespoons vegetable oil
- 2 green onion
- salt — to taste
- black pepper — to taste

Rinse the white rice under cold water and combine it with water in a pot. Bring to a boil, then cover and simmer for 15 minutes or until water is absorbed and rice is cooked.

While the rice is cooking, chop the green onions and set aside.

In a large pan, heat the vegetable oil over medium heat. Add the frozen mixed vegetables and stir-fry for 5 minutes until heated through.
