- 1 pound shrimp
- 2 tablespoon olive oil
- 1 lemon
- 2 tablespoon fresh parsley
- 1 cup quinoa
- 2 cup chicken broth
- 2 clove garlic
- salt — to taste
- black pepper — to taste

Rinse and devein the shrimp, then pat dry with paper towels.
