Ingredients

- 500 g chicken breast
- 400 g cottage cheese
- 300 g frozen mixed vegetables
- 1 onion
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp dried thyme
- salt — to taste
- black pepper — to taste

- 2 tbsp butter
- 1/4 cup milk

Preheat oven to 200°C (392°F).

Peel and dice potatoes into small cubes. Boil in salted water until soft, about 10 minutes.

While potatoes boil, dice onion and chicken breast into bite-sized pieces.

Heat olive oil in a pan over medium heat. Add chicken and onion. Cook until chicken is browned and cooked through, about 5-7 minutes, stirring occasionally.

Drain potatoes and mash with butter, milk, garlic powder, salt, and pepper until smooth.

Stir in frozen mixed vegetables, cottage cheese, dried thyme, and salt and pepper to the chicken mixture. Cook for an additional 2 minutes until vegetables are warmed.

Transfer chicken mixture to a baking dish. Top with mashed potatoes, smoothing out evenly.
