Ingredients

- 1 cup green lentils
- 1 cup white rice
- 1 onion
- 2 carrot
- 1 can canned diced tomatoes
- 1 cup frozen peas
- 2 clove garlic
- 1 teaspoon cumin
- 1 teaspoon coriander
- salt — to taste
- black pepper — to taste
- 2 tablespoon vegetable oil
- 3 cups water

Rinse the green lentils under cold water and set aside.

In a large pot, heat vegetable oil over medium heat.

Dice the onion and mince the garlic, then add them to the pot. Sauté for 3-4 minutes until onion is translucent.

Peel and chop the carrots into small cubes, and add them to the pot.

Stir in the cumin and coriander, cooking for an additional minute until fragrant.

Add the green lentils, rice, canned diced tomatoes (with juice), and water to the pot.
