Ingredients

For 4 servings

  • 1 can black beans
  • 1 cup brown rice
  • 1 cup frozen corn
  • 1 can canned diced tomatoes
  • 1 onion
  • 2 cloves garlic
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 tablespoon olive oil
  • salt — to taste
  • black pepper — to taste
  • 2 cups water

Instructions

  1. 1

Rinse and drain the black beans.

  2. 2

In a large pot, heat olive oil over medium heat.

  3. 3

Chop the onion and mince the garlic, then add them to the pot. Sauté until the onion is translucent, about 3 minutes.

  4. 4

Add the rice to the pot and sauté for another 2 minutes, stirring frequently.

  5. 5

Add water, diced tomatoes with their juice, black beans, and corn to the pot.

  6. 6

Stir in cumin, chili powder, salt, and black pepper.

  7. 7

Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes or until the rice is cooked and the liquid is absorbed.

  8. 8

Fluff the rice with a fork and adjust seasoning if necessary before serving.
