Ingredients

For 4 servings

  • 4 flour tortilla
  • 1 cup canned black beans
  • 1 cup shredded cheddar cheese
  • 1 jalapeño
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. 1

Drain and rinse the canned black beans.

  2. 2

Finely dice the jalapeño, removing seeds for less heat if desired.

  3. 3

In a medium bowl, mix the black beans with shredded cheddar cheese, diced jalapeño, salt, and black pepper.

  4. 4

Heat a skillet over medium heat and add olive oil.

  5. 5

Place a flour tortilla in the skillet, spoon 1/4 of the bean and cheese mixture on one half of the tortilla.

  6. 6

Fold the tortilla in half, pressing gently, and cook for 2-3 minutes on one side until golden and crispy.

  7. 7

Flip the quesadilla and cook for another 2-3 minutes until the cheese is melted and the tortilla is crispy.

  8. 8

Repeat with the remaining tortillas and filling.

  9. 9

Allow the quesadillas to cool slightly before slicing into wedges and serving.
