Ingredients

For 4 servings

  • 600 g ground turkey
  • 600 g courgette
  • 60 g breadcrumb
  • 30 g grated Parmesan cheese
  • 1 egg
  • 4 burger bun
  • 40 g lettuce
  • 160 g tomato
  • 60 g tomato ketchup
  • 15 ml vegetable oil
  • 1 tsp salt
  • 1 tsp garlic powder
  • 0.5 tsp black pepper

Instructions

  1. 1

Gently mix the turkey with half the salt, garlic powder and black pepper. Shape into four equal patties, approximately 10 cm wide and 2 cm thick, with a shallow indentation in each centre. Rub the patties with 5 ml of the oil and refrigerate until needed.

  2. 2

Cut the courgettes into batons approximately 1.5 cm thick and 6 cm long, then pat dry. Beat the egg in a bowl. In another bowl, combine the breadcrumbs, Parmesan and remaining salt, garlic powder and black pepper. Toss the batons with the egg, then press them into the crumb mixture. Drizzle evenly with the remaining 10 ml oil. Refrigerate until needed.

  3. 3

Slice the tomato and separate the lettuce leaves. Plan to cook and serve two portions at a time so the burgers and fries reach the table warm.

  4. 4

Preheat the empty air fryer to 190°C/375°F for 3 minutes.

  5. 5

Arrange two patties in a single layer with space between them. Air-fry at 190°C/375°F for 14–16 minutes, turning after 7 minutes. Check each patty through the side with a food thermometer: the centre must reach 74°C/165°F. Cook longer if necessary. Transfer to a plate and cover with an inverted plate while the fries cook.

  6. 6

Set the fryer to 200°C/390°F. Arrange half the courgette batons in one layer with small gaps; do not stack them. Air-fry for 12–14 minutes, turning gently after 6 minutes, until golden and tender. Check that the centre of a thick baton reaches at least 71°C/160°F, ensuring the egg coating is cooked. Divide between two serving plates.

  7. 7

Set the fryer to 160°C/320°F and warm two whole buns side by side for 2 minutes. Split them and assemble two burgers using the cooked patties and half the lettuce, tomato and ketchup. Serve immediately with the courgette fries.

  8. 8

Return the fryer to 190°C/375°F and preheat for 2 minutes. Repeat the patty, courgette and bun stages in steps 5–7 with the remaining ingredients, including the same temperature checks. Allow about 70 minutes of total appliance time for both rounds, including preheating; extra cooking may be needed to reach the safe internal temperatures.
