Ingredients

  • 1 cup dried white beans
  • 1.5 cups white rice
  • 1 can canned diced tomatoes
  • 1 onion
  • 1 carrot
  • 2 cloves garlic
  • 2 tablespoons vegetable oil
  • 3 cups water
  • 1 vegetable stock cube
  • 1 teaspoon dried oregano
  • salt — to taste
  • black pepper — to taste

Instructions

    Rinse the dried white beans and soak them in water for at least 6 hours or overnight.

    Drain and rinse the soaked beans, then transfer them to a pot. Add water to cover the beans and bring to a boil. Simmer for 1 hour or until the beans are tender. Drain and set aside.

    Finely chop the onion and carrot, and mince the garlic.

    In a large skillet, heat the vegetable oil over medium heat.

    Add the onion and carrot to the skillet and sauté until the onion is translucent, about 5 minutes.
