Ingredients

- 1 cup brown rice
- 0.5 cup dried black beans
- 4 egg
- 1 cup frozen mixed vegetables
- 1 tablespoon vegetable oil
- 2 cloves garlic
- 1 onion
- 1 teaspoon cumin
- 1 teaspoon paprika
- salt — to taste
- black pepper — to taste

Rinse the beans thoroughly, then soak them in water for at least 4 hours or overnight.

Drain and rinse the beans, then add them to a pot with fresh water. Boil for 30-40 minutes until tender. Drain and set aside.

Cook the brown rice according to package instructions, set aside.
