Ingredients

  • 1 cup rolled oats
  • 1 cup green lentils
  • 1 carrot
  • 1 onion
  • 2 cloves garlic
  • 2 tablespoons vegetable oil
  • 1 15 oz can canned diced tomatoes
  • 3 cups water
  • 1 vegetable bouillon cube
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • salt — to taste
  • black pepper — to taste

Instructions

    Rinse green lentils under cold water and drain.

    Peel and dice the carrot and onion; mince the garlic cloves.

    In a large pot, heat vegetable oil over medium heat. Add diced onion and minced garlic, sauté until soft and fragrant, about 3 minutes.

    Add the diced carrot to the pot and cook for another 2 minutes.

    Stir in the rinsed green lentils, ground cumin, ground coriander, and oats. Cook for 1 minute, stirring constantly.
